Both knives are SIGMAFORGE precision-forged from a single piece of special-formula high-carbon NO STAIN stainless steel and FRIODUR ice-hardened at 55-58 HRC (57 Rockwell) for blades that are harder, sharper, resistant to staining and chipping, and retain their sharpness longer. Honed and hand-finished by the most skilled artisans with a laser-controlled edge, the sturdy bolster provides the right balance and acts as a finger guard, while the ergonomic triple-rivet polymer handle is perfectly bonded to the full tang for optimum balance and safe handling. The 7-inch Rocking Santoku supports Western circular motion and Asian chopping for chopping vegetables, slicing meats, and preparing fish, with a Granton edge that prevents food from sticking. The 4-inch Paring Knife is ideal for cleaning, peeling, and cutting small fruits and vegetables, chopping fresh herbs, garlic, and onions. Made in Germany. Dishwasher safe; hand wash recommended.
