"Kanren" means "connection" in Japanese, and this long, thin carving knife is ideal for evenly slicing through meat and poultry. The FC61 steel core is embedded in 48 layers of stainless steel, creating a unique Damascus pattern that protects the blade from corrosion and chipping. The cutting edge is Honbazuke-honed in Seki, Japan, a three-stage grinding, sharpening and polishing process that results in razor-like sharpness at 60 to 62 HRC. The curved bolster and comfortable black linen Micarta handle deliver the ultimate in ergonomic, fatigue-free cutting. Made in Seki, Japan.
