With a 12.7 cm extra-thin and sturdy blade, it is ideal for cutting, peeling, and cleaning fruit and vegetables with extreme precision. The SG2 (MC63) micro-carbide powder steel core is surrounded by 100 layers of two different kinds of stainless steel, creating a stunning 101-layer Flower Damascus pattern that makes each knife a unique work of art. The CRYODUR blade is ice-hardened at -196 degrees Celsius to a remarkable hardness of approximately 63 Rockwell for excellent flexibility, robustness, and cutting edge retention. The blade is hand-honed using the traditional three-step Honbazuke process to a precise 9.5 to 12 degree edge angle with a symmetrical cutting edge of 19 degrees total. The Masur Birch handle in a soft light-brown colour provides an attractive contrast to the brightness of the steel, with a unique grain and structure on every knife, crafted in a traditional D-shape for excellent balance and control.
