MIYABI Artisan 6000MCT 9.5-inch Gyutoh is ideal for cutting and chopping meat and fish with precision and ease. The pointed tip is perfect for a variety of tasks, including the removal of bones from fish and meat. The authentic Japanese blade profile contributes to exceptional edge retention. The micro-carbide powder SG2 steel core has a hardness of approximately 63 Rockwell and is protected by two additional layers, finished with a katana edge. The blade features the distinctive hand-hammered Tsuchime finish, achieved using multiple hardening techniques including CRYODUR ice-hardening for improved flexibility and corrosion resistance. The blade is Honbazuke-honed on both sides using the three-step process to a 9.5 to 12 degree angle for outstanding sharpness and safe, efficient cutting. The Pakka wood handle has a unique, gently arched shape for a wide variety of cutting techniques with less effort. Hand wash only. Handcrafted in Seki, Japan.
