Description

MIYABI Artisan 6000MCT 8-inch Gyutoh is suitable for cutting and separating fish and meat with precision and ease. The pointed tip and sturdy blade enable clean cuts, while the authentic Japanese blade profile combines high cutting quality with comfort. The blade is made of an SG2 micro-carbide powder steel core wrapped in two additional layers of steel, finished with a katana edge. The blade is hammer-forged with the distinctive hand-hammered Tsuchime finish, then put through CRYODUR ice-hardening at -196 degrees Celsius to achieve a final hardness of approximately 63 Rockwell. The blade is polished on both sides and Honbazuke-honed using the three-step process to a 9.5 to 12 degree angle for outstanding sharpness. The flat finishing on the handle ensures safety by preventing the hand from slipping onto the blade. The Pakka wood handle has a subtle pattern and stands out for its sturdiness and flexibility. The perfect balance enables a high level of comfort and allows extended work without fatigue. Hand wash only. Handcrafted in Seki, Japan.
