The blade's core is made from SG2 (MC63) micro-carbide powder steel, a steel of above-average performance that easily meets the demands of a professional kitchen. The core is encased by 100 layers of steel of different grades and hardnesses, resulting in a stunning 101-layer Flower Damascus pattern with katana edge. CRYODUR ice-hardened to approximately 63 HRC. Hand-honed using the traditional 3-step Honbazuke process to a precise 9.5 to 12 degree edge for exceptional sharpness. The authentic thin Japanese blade profile features a rounded spine and heel for comfortable, fatigue-free cutting. The traditional D-shaped Karelian (Masur) Birch handle is truly unique as the grain of each piece of wood is different, with distinctive lines and stripes as a key design feature. Hand wash only. Handcrafted in Seki, Japan.
