A true work of culinary art, the MIYABI Birchwood 5000MCD Shotoh 5.5-inch combines the most precious materials in both blade and handle for a knife that is as beautiful as it is precise. The potent SG2 micro-carbide powder steel core is protected by 100 layers of steel in a stunning flower Damascus pattern, while MIYABI's innovative CRYODUR ice-hardening process locks in exceptional, long-lasting sharpness. The scalpel-like blade is hand-sharpened using the traditional Honbazuke method to an angle of 9.5° to 12°, and is complemented by an exquisite Karelian (Masur) Birch handle in a traditional D-shape. Handcrafted in Seki, Japan.
