MIYABI Artisan 6000MCT 6-inch Gyutoh features a smooth, pointed blade well suited to cutting and slicing fish, meat and large vegetables with precision. The authentic Japanese blade profile makes the knife extremely hard and sharp. The blade is manufactured from SG2 micro-carbide powder steel embedded between two layers of steel, then hardened using CRYODUR ice-hardening at -196 degrees Celsius to achieve extremely high levels of hardness and sharpness at 63 Rockwell. The blade is ground on both sides and Honbazuke-honed using the three-step process to a 9.5 to 12 degree angle. The distinctive hand-hammered Tsuchime finish adds a striking aesthetic. The ergonomically shaped handle is made from cocobolo Pakka wood, a dark, smooth-grained wood that contrasts beautifully with the blade. The gently arched handle shape enables effortless cutting, and the well-balanced design allows extended work without fatigue. Hand wash only. Handcrafted in Seki, Japan.
